100% Oregon grass fed beef at Ankeny Hill Farm! Located in Jefferson, Oregon (between Salem and Albany) our beef is grain free with No added hormones or antibiotics. Farm fresh, Oregon grass fed beef has exceptional flavor that surpasses anything you would buy in grocery stores. Our beef are raised on pasture most of the year and we feed hay and/or alfalfa over the winter. Grass fed, grass finished, no grain.
We sell by the 1/4 or 1/2. You are paying the deposit only at this time to hold your side of grass fed beef. We will send you an invoice for the remainder due once the steer is butchered and we know the exact hanging weight. The amount you pay to us is
- 1/2 beef or more– $4 per pound on the hanging weight (before cut and wrap) plus a flat kill fee of $62.50.
- 1/4 beef– $4 per pound on the hanging weight (before cut and wrap) plus a flat kill fee of $31.25
Then you pay the butcher $0.80 per lb on the hanging weight for the cut and wrap fee and a small rendering fee (around $6 per 1/4). *Cut and wrap fee is subject to change.

The Process of Buying Your Beef
When you purchase our Oregon grass fed beef today, you are paying the deposit only. We will bill you the total once the steer is butchered and we have a final hanging weight.
- 1/2 beef- $4lb hanging weight plus 1/2 of the kill fee, you pay cut and wrap fee when you pick up from the butcher. $300 deposit
- 1/4 beef- $4lb hanging weight plus 1/4 of the kill fee, you pay cut and wrap fee when you pick up from the butcher. $150 deposit
1/4 beef is around 150-175lbs hanging weight (could be a bit more or less)
1/2 beef is around 275-350lbs hanging weight (could be a bit more or less)
What is “hanging weight”? Hanging weight is what the steer weights after being slaughtered and the skin, head, non usable organs, and hooves are removed. The carcass is then split down the middle and weighed, giving the butcher the “hanging” or “carcass weight”, which is usually around 60% of the live weight. This weight is before cutting and wrapping. Your take home weight, after cut and wrap, will be approximately 55-65% of the hanging weight.
Kill Fee is what we pay the mobile slaughter person to come out and kill the steer. This is $125 per steer, so if you buy 1/2, you will pay a flat $62.50 for the kill fee. If you buy 1/4 of a steer you would pay $31.25 flat kill fee.
How it works…
Example: You buy 1/4 and pay us the $150 deposit.
When the steer is butchered, we’ll let you know what the hanging weight is and send you an invoice for the balance.
We’ll say in this example the hanging weight ends up being 150lbs for 1/4.
The total cost at $4 per pound for 150lbs= $600 + kill fee of $31.25
You already paid the $150 deposit so we we’ll send you an invoice to pay the balance which would be $631.25-$150 deposit= $481.25 left for you to pay us.
The meat hangs (ages) for at least 10 days at S&S Custom Slaughter.
The butcher will give you a call when they are ready for you to choose your cuts of meat (you can call them too if you like). They will guide you through the process if you have never ordered this way before (we use S&S Custom Slaughter in Albany, Oregon). You let the butcher know how you want your beef and pay the butcher the cut and wrap fee of $0.80 per lb which would be $120.
The total amount that you would end up paying, in this example, for 1/4 beef is $4.80 per lb on the hanging weight plus $31.25 kill fee which comes to $751.25.
Remember, the hanging weight will vary from cow to cow (steer in our case), so you could end up paying a little less or a little more depending on the weight.
What you take home after cut and wrap, in this example of 150lbs hanging weight will be around 80-97lbs of beef.
